There’s a fish stall at the market, with a huge range of fresh fish. I have a language issue when it comes to fish, I know the Dutch words – but not the English words. We just have different fish where I come from.
So I always end up with cod (kabeljauw) or salmon (zalm) because I can translate those.
I cut the cod filets into small pieces, crumbed it in Panko (Japanese bread crumbs) and served it with a fennel, tomato, shallot and caper salsa.
